Sesame Ginger Chicken

4 - 4 oz. boneless, skinless chicken breast
2 T. Sun Luck Light Soy Sauce
2 T. honey
1 T. minced ginger root
1/2 t. vegetable oil
2 t. Sun Luck Toasted Sesame Seeds
2 1/2 inch thick slices of fresh pineapple halves

Gently flatten chicken with a mallet to 1/2 inch thickness. Combine soy sauce, honey and ginger in a shallow dish. Add chicken and turn to coat. Marinate 15 to 30 minutes, turning once. Remove chicken from marinade and shake off excess. Sauté in large non-stick skillet in oil 5 to 8 minutes or until no longer pink. Remove chicken to platter and keep warm. Place pineapple slices in pan and cook 11/2 to 2 minutes or until thoroughly heated, turning once. Place pineapple between chicken slices and serve. Serve with Sun Luck Niko Niko Calrose Rice.
