Yam Cakes
1 lb. fresh cooked yams, peeled and mashed Mash the cooked and peeled yams in a large bowl. Add all other ingredients and mix well. Form the yam mixture into eight pancake-like shapes. Spray a large griddle or skillet with non-stick vegetable spray and spray your spatula as well. Place the cakes on the hot griddle and turn when the edges become dry and the bottom turns a golden brown. Brown the other side and remove from griddle. This should take about 5 minutes for a cake. It's a lot like cooking pancakes so the 15 minute cooking time will vary depending on the size of your griddle, and how many cakes you can fit on the griddle at one time. It may take only a few minutes or more. Serve your yam cakes warm with apple sauce or additional Sorrell Ridge. The cakes make a wonderful side dish for chicken, turkey and pork dishes. Makes 8 cakes.
