Sorrell Ridge Two-Fruit Rice Pudding

Cook Time: 60 mins.

Preheat oven: 350 degrees


Makes 6 to 8 servings.

2 cups cooked white or brown rice

1/2 jar Sorrell Ridge Apricot
1/2 jar Sorrell Ridge Peach
or
1/2 jar Sorrell Ridge strawberry
1/2 jar Sorrell Ridge Raspberry

2 eggs well beaten
2 1/2 cups whole milk
1/2 cup chopped dates (optional)
Pinch of nutmeg
1/2 teaspoon vanilla
4 tablespoons melted margarine

1. Place cooked rice in a large bowl. Combine eggs and the two flavors of Sorrell Ridge and beat well by hand. Add to the rice and blend. Now add your milk, dates and nutmeg to the rice mixture and mix. Add the melted margarine and vanilla and stir well.

2. Pour the above rice mixture into a greased 1 1/2 quat baking dish. You may use vegetable spray. Bake about 1 hour until the center is firm. Serve warm or chilled.

Makes 6 to 8 servings.
