Homemade Sorrell Ridge Tomato Sauce

Prep. Time: 30 mins.

Cook Time: 2 hours (aprox.)

Makes about 3 pints.

1 large can of Italian plum tomatoes (1lb. 12 oz. size)
2 cans tomato paste
1/4 cup Sorrell Ridge Apricot or Peach
2 cups of water or vegetable broth
2 cups of chopped onions
3 cloves of fresh minced garlic
2 tablespoons olive oil
1/2 teaspoon salt
a few turns fresh ground black pepper
1/4 cup grated Parmesan cheese
1/2 teaspoon oregano
1/4 teaspoon basil

1. In the bottom of a large sauce pan or kettle, sauté the onions and garlic in the olive oil on a low heat.

2. Now add the can of tomatoes with the juice, the water or broth, the two cans of tomato paste, the Sorrell Ridge, the salt, pepper and the Parmesan cheese. Simmer all of this over a low heat for about 1 1/2 hours adding a little water is necessary if the sauce thickens too quickly. Stir occasionally. Now add the oregano and basil and simmer for another 1/2 hour. The sauce should be thick when done. Use this wonderful sauce for my lasagna recipe or for any recipe that calls for tomato sauce.

3. You may turn this recipe into a meat sauce simply by adding 3/4 of a lb. of ground meat at the beginning of the recipe when you are cooking the onion and garlic. The meat will then simmer with the tomatoes for the next two hours. You may drain the excess fat from the meat before adding the tomatoes if you wish.
