Sesame Orange Apricot Chicken

Cook Time: 1 hour

Preheat oven: 350 degrees


Makes 4 servings.

1 frying chicken, about 3 lbs.
1/4 cup sesame seeds
1/2 cup of flour
1/2 cup of Sorrell Ridge Apricot
1/2 cup of orange juice
2 teaspoons of salt
1/2 cup of light cream
1/4 teaspoon of cayenne pepper
1/4 teaspoon ground white pepper
3 to 4 tablespoons olive oil
2 tablespoons margarine
2 cups of chicken stock

1. In a paper bag combine half of the sesame seeds in the flour with the salt, cayenne pepper and white pepper. Shake one piece of chicken at a time in the bag. Reserve the remaining flour.

2. In a large skillet on the stove heat the olive oil and brown the chicken. When you are done browning the chicken, transfer the chicken to a large shallow baking dish, but reserve the pan drippings.

3. Now melt the margarine into the pan drippings over a low heat. Gradually blend in 2 tablespoons of the flour mixture and then slowly add the cream, stirring constantly so no lumps will form. Now slowly add the orange juice and the Sorrell Ridge Apricot and stir constantly until the sauce is just starting to thicken. Remove from heat and add remaining sesame seeds. Pour over the chicken, cover and bake 50 minutes. Then bake uncovered 10 more minutes to brown.

4. Now remove the Sorrell Ridge Duck Sauce from the fridge and with a basting brush or spoon spread some of the duck sauce over each piece of chicken. Bake another 15 to 20 minutes until Duck Sauce is bubbling hot. If you really want to splurge you can make a double batch of the duck sauce and serve as a condiment with the chicken pieces. Put the sauce in a gravy boat and pass around the table.

Note: Both the barbecue sauce and the Duck Sauce are wonderful with other meats separately or together as in this recipe. For example: Barbecue Short Ribs, Barbecue Roast Duck with Duck Sauce, Spareribs with Barbecue Sauce and Meatballs in Duck Sauce. The Home-made Sorrell Ridge Duck Sauce is particularly fantastic with Chinese Spareribs as a dipping sauce and with Battered Shrimp.
