Fruit and Nut Ricotta Treat

Prep. Time: 20 mins.

Cook Time: 60 mins.

Preheat oven: 350 degrees


Makes 4 servings.

2 cups part skim ricotta cheese
1-10 oz. jar Sorrell Ridge Strawberry
1/2 teaspoon vanilla
1/2 cup of raisins
1/2 cup chopped walnuts plus walnut halves to decorate
2 diced apples peeled and cored
2 sliced ripe bananas

1. Place the ricotta, the Sorrell Ridge and vanilla in a blender and blend until satin smooth. Empty into a bowl and stir in the raisins and nuts. Store in the refrigerator until ready to use.

2. To serve, divide the apple chunks and banana slices into 4 serving dishes and scoop the ricotta treat into equal portions on top of the fruit. Decorate each dish with a walnut half.

3. Bake until the top of the pudding is golden brown - about one hour.

Optional: Melt additional Sorrell Ridge Strawberry and drizzle over each portion of Ricotta Treat. To melt, place an opened jar of Sorrell Ridge in a pan of hot water and keep on low heat until the Sorrell Ridge will pour. Make sure to use a mitt when handling the hot jar.
