Lemon Salad Dressing

Prep. Time: 15 mins.

Makes about 1 cup of dressing.

3/4 cup of light olive oil
Grated peel of one lemon
2 teaspoons of minced garlic
1/4 cup of Sorrell Ridge Strawberry
1/4 cup lemon juice
1 teaspoon salt
1/2 teaspoon of ground cumin
1/2 teaspoon dried mustard
1/2 teaspoon paprika
1/8 teaspoon cayenne pepper
2 tablespoons minced parsley

1. Blend all the ingredients in a blender putting in your oil first. Pour the finished dressing into a container with a tight lid and refrigerate for at least one hour. Always shake just before using.

2. This dressing is just wonderful with low fat cottage cheese and apple and orange slices. In a controlled serving it can make a delicious calorie conscious portion. The dressing can be blended in with the cottage cheese leaving the fruit to the side or the fruit may be chopped and mixed with the cottage cheese and dressing.

3. Another lovely way to serve this dressing is with layers of tomato slices, sweet onion slices, cucumber slices and rings of sweet red pepper. Layer the slices on a large platter with the dressing drizzled in between the layers. You have enough dressing to make a large salad for 8 to 10 people or make a smaller salad for four and save the remaining dressing in your fridge to use on your cottage cheese the next day.
