Sweet Potato, Apricot and Apple Bake

Prep. Time: 10 mins.

Cook Time: Bake in 350 degrees oven for 30 min. covered, then 10 min. uncovered

Preheat oven: 350 degrees


Makes 8 servings.

6 medium sweet potatoes or yams
4 tablespoons of margarine
1 cup of dried apricots cut in half
3 apples peeled, cored and sliced 1/4" thick
1/2 cup Sorrell Ridge Apricot
1/2 teaspoon cinnamon

Peel and cook sweet potatoes or yams by boiling until cooked but still firm. Slice your potatoes in 1/4 inch thick circles. Spray a 2 quart baking dish with vegetable spray.

Place a layer of sweet potatoes or yams on bottom of dish. Top this layer with a layer of all the apricots and apples and then finish with a layer of sweet potatoes or yams. Melt the margarine and Sorrell Ridge over a low flame and stir in cinnamon. Pour this liquid over your sweet potato and fruit mixture and bake as directed. Serve hot.
