Prep. Time: If you use a commercial, sugar free tomato sauce - about 30 min.

Cook Time: 45 - 60 mins.

Preheat oven: 325 degrees


Makes 10 to 12 servings.

3 cups of Sorrell Ridge Basic Tomato Sauce - or sauce of your choice (Recipe for Homemade Sauce-page 30)
2 tablespoons olive oil
1 lb. of packaged lasagna or 1 lb. of fresh made lasagna available at some supermarkets
1 lb. reduced fat Mozzarella cheese (shredded)
1 lb. reduced fat Ricotta
1 1/4 cups grated Parmesan cheese
1 teaspoon minced garlic
a pinch of ground oregano
a pinch of ground basil
1/2 cup minced onion
1/4 cup Sorrell Ridge Apricot

1. Heat the oil on a low heat in a skillet and then sauté the onion and garlic until the onion turns clear and soft. Add the 3 cups of tomato sauce and blend in 1/4 cup Parmesan cheese and if using a commercial sauce, blend in the Sorrell Ridge and the oregano and basil as well. If you use the Homemade Sorrell Ridge Sauce the additional Sorrell Ridge and herbs are not necessary here.

2. If you are using fresh made lasagna you do not have to precook the lasagna before baking. If you are using packaged lasagna, follow the package instructions.

3. Use a baking dish 9" x13" inches deep. Cover the bottom of the dish sparingly with sauce and then a layer of lasagna. Using half the cheeses, make a layer of ricotta and then top the ricotta with shredded pieces of the mozzarella and the grated Parmesan cheese. Spread with half of the remaining sauce. Now repeat the process for a second layer of everything using all the remaining cheeses and sauce.

4. Bake, uncovered, for 45 minutes to an hour and cool slightly before serving.

Tip: Before using the ricotta, remove as much moisture as possible by pressing with paper towels. This will help create a firmer lasagna.
