Prep. Time: 10 mins., plus 30 mins. to chill

Cook Time: 10 mins.

Preheat oven: 425 degrees


Makes 10 to 12 servings.

Serving Size: 1 cookie (circle, 2" across, approximately)
Number of cookies produced will vary depending on their size.

1 cup shortening
1/2 cup dark corn syrup
1 cup Plantation Blackstrap Molasses
2 eggs
1/2 t ground ginger
1 t baking soda
1/2 cup hot water
Flour

1. Melt shortening, add corn syrup and molasses. Add the beaten eggs and ginger. Then dissolve the soda in hot water and add.

2. Mix well and add enough sifted flour to make a stiff dough. Chill the mixture in the refrigerator for 30 minutes to an hour, then roll the dough on a thinly floured board, and cut into shapes.

3. Roll remainder and cut out additional cookies; repeat until all dough is used.

4. Bake in 425 deg. oven for approximately 10 minutes or until done.
