Cook Time: 65 - 70 mins.

Preheat oven: 350 degrees


Makes 8 servings.

1 3/4 cup all-purpose flour
1/3 cup margarine (Room temperature)
2 teaspoons baking powder
1/4 teaspoon baking soda
Pinch of salt
1/2 cup of Sorrell Ridge Peach
2 eggs, well beaten
1 cup of ripe mashed bananas

1. Mix the dry ingredients together in one bowl. Mash the ripe bananas in another bowl and hold to the side for the moment. In a large bowl, cream together the margarine and the Sorrell Ridge until it looks fluffy. Add the beaten eggs and mix well. Now add the flour mixture alternately with the mashed bananas into the egg mixture is smooth. Turn the batter into a standard loaf pan (8" x 4") that has been well greased or has been sprayed with a nonstick vegetable spray. Bake for about an hour and 10 minutes until lightly brown and firm to the touch. Use middle rack.

2. You may add a cup's worth of extras to this recipe if you wish. For example: 1/2 cup of pecans and 1/2 cup of chopped dates.
