Chicken In Saucy Susan Duck Sauce

Prep. Time: 20 to 30 min.

Cook Time: 1 hour

Preheat oven: 350 degrees


Makes 8 servings.

2 chickens cut into 8 pieces each
2 teaspoons minced garlic
Salt and pepper to taste (optional)

Barbecue Sauce
1 cup of finely minced onion
6 oz. can of tomato paste
1/4 cup Sorrell Ridge Peach
2 tablespoons apple vinegar
3 tablespoons soy sauce
1/4 cup of water
             
Duck Sauce
1-10 oz. jar plus 1/4 cup Sorrell Ridge Peach (Apricot may be used in this recipe also)
1 tablespoon apple vinegar
1/2 teaspoon ginger
1 teaspoon minced garlic
1/4 cup of 100% apple sauce

1. Prepare the two different sauces in two separate bowls. Place the duck sauce in the refrigerator until it is time to use it.

2. Clean the chicken and pat dry. Remove the skins if you want to reduce the fat level. Rub the two teaspoons of minced garlic all over the 16 pieces of chicken. Place the chicken in a very large shallow baking dish or in two smaller ones so that the pieces can lay flat in one layer. Salt and pepper the chicken if you wish to.

3. Spoon the barbecue sauce a bit at a time over each piece of chicken so that all the chicken has some barbecue sauce on it. Bake uncovered for about 45 minutes in the oven basting the chicken with the sauce occasionally and adding a little water if necessary to the bottom of the pan.

4. Now remove the Sorrell Ridge Duck Sauce from the fridge and with a basting brush or spoon spread some of the duck sauce over each piece of chicken. Bake another 15 to 20 minutes until Duck Sauce is bubbling hot. If you really want to splurge you can make a double batch of the duck sauce and serve as a condiment with the chicken pieces. Put the sauce in a gravy boat and pass around the table.

P.S. Both the barbecue sauce and the Duck Sauce are wonderful with other meats separately or together as in this recipe. The Home-made Sorrell Ridge Duck Sauce is particularly fantastic with Chinese Spareribs as a dipping sauce and with Battered Shrimp.
